There is a way around this, I have a part payment offering for my customers where they make a deposit down payment on an item and we put the rest of the order on an unpaid status.
They can pay off whatever they like and it still shows their balance on their receipt.

We do this in my pet store, and it's able to be done on the till front end.

    Our work around is this:

We add all the items the customer is purchasing, say if it's £300 sale, and they want to pay off £50 now and come back and pay the rest of at a later date, we use the split payment feature and put the £50 on the cash or card payment and then the remaining amount onto a "Unpaid - On account" payment option that we created, this is amount is shown as unpaid. It also forces the user to assign a customer, so they have to get the details in order to put the order through.
The receipt shows what's been paid and what is unpaid.

The customer can bring back the receipt to make a payment, and we can find it in the documents section, then we go to payments screen, delete the unpaid payment, add the new one with the present date, then re-add any unpaid amount back on.
Go to view sales screen, scan ticket again to get the sale, reprint the receipt, it will then show the two payments and remaining balance again.

And so on, until paid completely.

If you need me to help you more I can. Just reply back.
