Customizable Receipts

We are a retail bakery.  We would appreciate a higher flexibility with the receipt printing. We would rather go the other way than someone else posted on here. We would love to chose to print less. Saving some paper. We are a retail store and we would disable:

User
Either Cash or paid amount (redundant)
The receipt number doesn't have to be in a bigger font.

We would also like the Tax type for each product removed. At the moment it prints like "Country Loaf (GST)" for each product. Is there a way to remove the "(GST)"? In some cases the product name fits onto one line but then the "(GST) prints in the next line etc. Again, more paper needed.

In general I would say a higher flexibility would please a lot of people and make the receipt better customizable.
