On a current Product's menu there's a 'Unit of Measurement' field. An additional field '@ $______ Ea.' would allow the user to save $ per pound / per gallon price of a bulk item to streamline POS entry and inventory tracking. Then, either price or quantity of a bulk item could be entered at POS and the appropriate simple multiplication or division would occur. Example:

Chocolate Cashews

(8oz @ $.80 / oz.)          $6.40

Gasoline Regular 87

(6.8 Gal. @ 2.90 / Gal.)  $20.00

and inventory would be adjusted accordingly, in the units specified. $20 worth of fuel would reduce inventory by 3.8 Gal @ $2.90 / Gal. and other bulk sales would be simplified.
